Yum! Aromas of golden apple, toasted almond and buttered croissant, pithy lemon, and a hint of warm spice. Full bodied, bright, crisp acidity, and a nice balance of fruit, and toasty, bread and butter notes on the palate. This wine was aged on lees for 10 months and finished malolactic fermentation in stainless steel. The wine was also aged in new and old French oak, added some additional softness and warmth. Enjoy! This is a classic pairing with something like roasted, herbed chicken, or lobster in drawn butter. Very worthy of your next family gathering.

Wild yeasts are a key point to the flavours and texture, also unfiltered to grab all that earthy texture. A unique bouquet - toasted bagels, cheese rind, pineapple skins, grapefruit and rosemary on the nose accompany flavours of crisp apples, toasted almonds and soft touches of tropical fruit and spices. Medium full body and balanced acidity. Delicious and unique. Pair with washed rind cheeses and fresh fish. 89 points - tasted March 2018

Alex: Here starts a decision to use wild yeasts vs. cultured ones, and I already see a big difference in the 2015 Chardonnay vs. 2014. This wine comes across as very balanced - a smoky, spicy, clean nose with ripe pear fruit in the background. Very fluid on the palate, finely textured with length and crispness on the finish. No shortage of fruit either, all elements are in place. 90pts

Priya; I'm not the biggest Chardonnay fan so perhaps not the best judge of this one. I did enjoy that the apple and pear were present and not overshadowed by the wet stone that is common in this grape. A good sip. 88pts

This is an almond croissant treat in the form of a juicy mouthwatering unfiltered PEC Chard made with Niagara fruit. Full bodied and lusciously rich. Crisp and tart with a long finish and persistence of candied lime peel, buttered croissant. Paired with lobster tails and lightly garlic-infused butter and a side of freshly baked warm Parisien baguette. Tasted Dec 2016. Rated 89/100.

An interesting combination of zesty citrus combined with rich toasted buttery notes. Key flavours of caramel coated tart green apple, cedar and toasted hazelnut standout on the palate.
