Santa Alicia 2018 Cabernet Sauvignon is rich on the nose with blackberry compote, chocolate and vanilla aromas. Dry, full-bodied and smooth on the palate with ripe blackberry, plum, mint, dark chocolate, with good acidity for food. Tannins are firm and ripe. Ammonites were the predators of their time millions of years ago stalking and feeding on marine creatures such as mollusks and small fish. It was likely that they lived in shallower waters as the high pressures of being in deep water would have likely crushed their shells. This is interesting because the Ammonite pictured on the front label of this Chilean Cabernet represents the plentiful Ammonite fossils that are found in the higher Andres Mountains where the irrigation water for this winery's vineyard originates. The grapes are grown in the Pirque region of the Maipo Valley. The wine aged for 12 months in French oak barrels.
