From the Famille Perrin, the 2020 Tavel is a juicy and vibrant blend of Cinsault, Grenache and Mourvèdre. Always a crowd-pleaser, you can expect this wine to be vibrant with ripe strawberry, fresh raspberry, dried herb and spicy flavours on the palate. Produced in the saignée method, where the whole berries are placed in the tank and are allowed to crush under their own weight. After 12 hours of maceration, the juice is left to "bleed" out and fermentation begins after settling. The wine juice is cool-fermented up to 20 days, racked and rested in stainless-steel tanks until filtered and bottled in February.
