Tuna Tartar

Tuna Tartar

Serves 2-4 as appetizer

Difficulty - easy
A tablespoon of sesame seeds, toasted and cooled.
8 oz or 220 grams of Sashimi grade tuna diced into small pieces kept on a cold plate
About 1/2 teaspoon sesame seed oil
About 1/2 teaspoon light soy sauce
About 1/4 teaspoon of Shichimi Togarashi (a Japanese 7 spice mixture available in most Japanese food stores)

Mix all ingredients just before serving, adjust seasoning and if you feel fancy, chop a bit of chives and sprinkle on top.

Serve with thinly sliced and toasted sweet French baguette, I recommend Acme if you are in the SF Bay Area, or Challah.

Complementary Wines: Chablis, Champagne rosé, Gewürztraminer, Riesling

Unquenchable by Natalie MacLean

Natalie MacLean is a new force in the wine writing world ‐ a feisty North American answer to Hugh Johnson and Jancis Robinson. She can write beautifully about wine.

The Financial Times of London

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
