Château Saint-Roch Domaine Lafage Chimères 2012, Côtes du Roussillon-Villages, Midi A.P., France: Love the incredible range of styles that the Rhone region produces, like this intriguing red wine blend. Full-bodied and deeply savoury. Wow, so different: love it! Violets, black plum, deep dive black raspberry into a heart of welling darkness and satisfaction. Platonic ideal of concentration and depth with a long, sensuous finish that leaves you bathed in flavour satisfaction. Pair with hearty meat dishes and deep conversations. Produced by Domaine Lafage, this robust Rhone red wine from 2012 vintage of this Cotes du Roussillon Chimeres is a blend of mostly Grenache and Syrah grapes, with a splash of Carignan. The wine undergoes an extended cold-soak that's not in stainless steel tanks, then fermentation in 500 litre barrels. The vineyards are located close to the village of Maury in the Rhone Valley. Gerard Bertrand Côte des Roses Rosé 2015, Languedoc, Midi A.P., France: Freshness is everything in this wine. Grenache is ideal for rosé because it matures easily and quickly, has vibrant aromatics, yet keeps its zesty acidity for food. This lovely southern French rosé is a blend of Grenache, Cinsault and Syrah grapes. It's elegant, yet full-bodied for rosé and very satisfying. This grape has a short vegetative cycle and yields enough for production while keeping the fresh character. The bottle for this rosé was created in a competition for students at design schools in Paris. There is actually a rose shape and cut to the glass on bottom, as well as an elegant glass stopper on the top. pair with planked salmon or seared tuna. Gérard Bertrand Grand Terroir La Clape Syrah Carignan Mourvèdre 2013, Midi A.P., France: The grapes for this French red wine blend are planted closer to the Mediterranean sea and therefore there are more spice accents in the finished wine along with red fruits, lavender and pepper. The vines are planted at an altitude of 200 metres above sea level, which preserves their freshness with cool nights. The soils consist of limestone plateau that's thousands of years old. The finish has moorland accents. Pair with rosemary lamb. Although the Languedoc is the world's largest wine region with 235,000 acres, it is not one homogenous mass or style wine-wise. There are actually 5 sub-climates and more than 50 different grapes used in varying blends. Compare that to the 5 grapes used in Bordeaux. There are also 8 different and distinctive winds that blow through the vines here as compared to one in the Rhone, the Mistral. Drink: 2016-2019. 370262 14% XD 750 mL  $19.95 Score: 93/100.
