County Cider Company Ice Cider, Prince Edward County, Ontario, Canada: Ice cider is made in a very similar way as Icewine is, except cider is apple-based and icewine is grape-based. For this cuvée of blend of cider, the cidery used a mix of frozen Russet, Ida Red and Spy apples have been pressed to produce a sweet and concentrated juice. This is then fermented to create this luscious cider. Gorgeous apple goodness: your mouth waters even smelling this terrific cider. Good balance.
