A fan in general of Celestino Gaspari’s Zyme wines (Kairos when in the mood for a big, bold, celebratory red) I had yet to try his Valpolicella. Located in the heart of Valpolicella Classica, this wine is matured in an underground cavern complex fashioned in the stone itself of an ancient sandstone quarry, dating back to the 15th century. A dry, fresh and fruity red wine, the winemaker himself considers this wine a ‘junior’ Valpolicella, 40% Corvina, 30% Corvinone, 25% Rondinella and 5% Oseleta - it is a light purplish red to the eye, strong on fruit with a slight spoce to the nose and medium bodied and fruity to the taste. Recommended pairings on the official site are ‘aperitifs and snacks, cold cuts and cheeses’ and we chose it for exactly that reason for a Thanksgiving Day brunch of charcuterie and cold cuts, soft and hard cheeses and a roasted butternut and cream soup. Perfect!
