These wines are slightly on the cusp of trendiness in food and wine culture. These styles of wines were tremendously popular for a spell a few generations ago and then suddenly went out of style as the sort of plonk you would find in your grandmother's liquor cabinet, open and with only an inch used.
More recently, they have become famously valued for their tremendous complexity and drinkability. It'a wonderful drink to sit and contemplate with, but also pairs well with nuts and flake pastry.
You'll find it has had an upturn in popularity. Pedro Ximenez (EE-mehy-neth) is fantastically long-lived. It also reaches unprecedented ripeness levels. Some claim it ferments to 17-20% naturally. Most grapes struggle to reach over 15%.
When blended in a solera system (careful blending of old and young wines for multi-vintage complexity), you get a mix of youthful fruit notes of lemon, orange, and bruised apple. You also get maturity notes of milk chocolate, old leather, figs, and raisin.
This is a liquid treasure worth hoarding. The price is low because it is only the entry level version and, as previously mentioned, it's popularity is on the upswing only recently. This is a chance to taste a stellar wine before prices go up again.
