In November 2016, Dillon's released their first bottling of Canadian Rye from Cask No. 1. The mash bill of 100% Ontario-grown grain (90% rye grist and 10% malted rye) was distilled in a copper pot still, non-chill filtered, and matured for 42 months in Ontario White Oak costumed coopered in the province.

The rye was bottled into 960 bottles of 200 mL at cask strength (59.0% a.b.v.). Each bottle was individually numbered, finished with a stamped copper band hand-welded onto the neck, and sealed with a wood-topped cork closure.

This rye spirit has a radiant medium copper colour. Its nose is composed of soft toffee, orange peels, fresh cut timbers, honey, gunmetal, and a light malt sweetness. The mouthfeel is soft and silky with a medium weight. The palate shows off citrus peels, hot cinnamon, and a black pepper finish. All-in-all, a very nice tipple, packaged in a handsome bottle.
