Torres Salmos 2017 is a lush and full-bodied red wine blend of 40% Carignan, 40% Grenache and 20% Syrah produced by Miguel Torres. The grapes for Salmos are planted on slopes of shale called "licorella stone." The name of "Salmos" is in honour of the monks of La Cartuja who first planted the vines in the Priorat region. This is a fragrant, spicy wine with earthy violets, dark berry and licorice aromas. Dry, full-bodied, rich and concentrated on the palate with ripe dark berry, cherry, anise, earthy and smoky flavours on the palate. Tannins are structured and firm. Good now, but better in a couple of years as it marries and mellows. Try in 2023 with a grilled Tomahawk steak.

Food pairings: rabbit fricassee over tagliatelle, steak and kidney pie, roast chicken.

There are very few people in the wine world who "get it" and Natalie is one of those who brings more fun to a buttoned-up and stodgy game.
