From South Australia's Barossa Valley, Thorn Clarke's Shotfire Quartage (2016) is robust, full of ripe black fruit, tannins and announces its arrival. It's a very big wine that needs meat --the rarer the better. A full-bodied blend of cabernet sauvignon, cabernet franc, petit Verdot and merlot grapes.

Food pairings: grilled sirloin steak with garlic mashed potatoes and seasonal vegetables, vine leaves stuffed with minced sirloin and baked in tomato sauce.
