Concha y Toro Casillero del Diablo Reserva Especial Cabernet Sauvignon 2021, Maule Valley, Chile: Concha y Toro Casillero Del Diablo Reserva Especial 2021 Cabernet Sauvignon is dry, medium-bodied and bright with black currant, black olive, pepper and toasty oak spice flavours juicy and fresh on the palate with a lingering berry fruit finish. Tannins are pleasantly chewy. A great value Chilean Cab at $18 made for burgers and ribs from the grill. Cabernet Sauvignon food pairings: roast beef, pheasant, grilled game sausages. Conde De Haro Cava 2019, Cava D.O., Spain: From Muga, Conde De Haro 2019 Cava is made in the same traditional method as in champagne with 70% Macabeo and 30% Chardonnay grapes. Dry, medium-bodied, fresh and zesty with a lively persistent mousse of fresh-sliced apple, peach, lemon zest and flinty steely flavours chalky textured on the palate.
